What is barbeque?

True barbeque or barbecue (common spelling variant, with abbreviations BBQ & Bar-B-Q; Barbie, Braai used in South Africa) is a method for cooking meat or poultry, where the meats are slow-cooked using wood smoke to add flavour. It may include the application of a marinade, spice rub or basting sauce to the meat.

Barbequing is not grilling. Grilling is cooking over direct heat, usually a hot fire for a short time. The distinction between barbequing and grilling is the heat level and the intensity of the radiant heat.

Why isn't my food hot?

True BBQ is cooked over a low heat and therefore never gets “hot”. The meats are served at the same temperatures that they are cooked. 

Why is the food pink & what is a smoke ring?

Don’t worry! Your food IS cooked. Cooking over a low heat with wood imparts a pink ‘tinge’ to chicken, especially near the bone and creates a pink smoke ring around certain meats.

What is a rub?

A rub is a combination of spices that is rubbed onto the meat prior to cooking to help form a crust or ‘bark’ on the meat.

What are pulled meats?

Due to our low and slow cooking method, our meats reach amazing tenderness so the meats can then be pulled into shreds.

How do I reheat my ribs and other red meats safely?

All our meats can be reheated in a low oven around 90 - 100°C or in a microwave. Please be aware that in order for food to be safe for consumption, meat needs to be heated above 70°C and should not be reheated, cooled and then reheated a second time. Reheat only what you plan to eat on that occasion.

Do you have BYO & what is the charge?

Yes, we have BYO. There is a $1 charge per person for BYO. We are also governed by the laws covering responsible service of alcohol.

What is ‘Slow food...fast’?

Our motto - ‘Slow food…Fast’ is about our passion to preserve traditional cooking methods and provide an alternative to the unhealthy fast food that is so prevalent. Our meats are rubbed with spices and smoked at low temperatures for up to 16 hours. Anthony Bourdain said in ‘A Cooks Tour’ that Barbeque is the ‘antithesis of fast food’. Despite the fact that our meats are ‘slow cooked’, we are able to serve them quickly when orders are placed, so hence our food is slow food… fast!
